As Culinary Director, I see how fresh sourcing and scratch cooking strengthen health, satisfaction, and daily life.
In my kitchen, from-scratch cooking starts with fresh produce and fresh proteins. I avoid heavily processed items like pre-breaded chicken breasts or frozen crab cakes. Instead, I build each dish from raw ingredients. This approach gives me full control over quality, flavor, and nutrition.
Fresh ingredients directly support resident health. When we limit preservatives, everyone benefits. I also reduce excess salt, sugar, and unnecessary seasonings. Rather than relying on heavy spice blends, I build flavor through technique and thoughtful ingredient pairing.
I adapt meals by starting with fresh products and modifying recipes as needed. Because I control each component, I can avoid ingredients that often cause issues for older adults. For example, I adjust dishes for residents managing diabetes, diverticulitis, or gluten sensitivities.
At the same time, I honor comfort and nostalgia. We still serve dishes that include butter, cream, or bacon. However, we offer them in moderation and prepare them with intention. Residents enjoy familiar flavors that remind them of home while still receiving balanced nutrition.
One standout favorite is chicken paprikash. I prepare it entirely from scratch using boneless chicken thighs and serve it over egg noodles rather than traditional dumplings.
First, I pat the chicken dry, season it with Hungarian paprika, and brown it in butter. Then, I use the same pan to develop the sauce. Afterward, I finish the chicken in the oven until it reaches an internal temperature of 165°F.
Next, I cook diced onions in the pan until translucent. In a separate bowl, I blend sour cream and flour. I slowly incorporate that mixture into the onions while stirring continuously. I bring the sauce to a boil and cook it for about three minutes until it thickens.
Meanwhile, I prepare the egg noodles and lightly coat them with a small amount of butter and sour cream. To serve, I plate the noodles first, top them with the chicken, and spoon the sauce over the dish. Finally, I garnish it with chopped parsley before service.
Scratch cooking takes time and skill. However, that effort makes a visible difference on every plate. Freshly prepared meals support wellness, enhance flavor, and create a dining experience that feels personal and comforting.
